It demonstrates gratitude for Allah's sustenance and asks for His blessing ('barakah') to remain in the food, making it beneficial for our bodies and souls. Source & Authentication
It was narrated from Anas that the Messenger of Allah ﷺ said: "When Allah, the Mighty and Sublime, bestows His favor upon one of you concerning his food, he should say: 'O Allah, bless us in it, and provide us with something better than it.' And when Allah, the Mighty and Sublime, bestows His favor upon one of you concerning milk, he should say: 'O Allah, bless us in it, and increase us in it' - for I do not know of anything that satisfies food and drink except milk. (This wording is according to Ibn Al-Muthanna)."
